YUM! Fill your tummy with a healthy and delicious dip!

Take Cowboy Caviar for a gathering to share or keep the goodness all to yourself.

Enjoy Cowboy Caviar with tortilla chips or another preferred snack.

You can also pair Cowboy Caviar with some grilled chicken or left over shredded beef.

Always check your ingredients to be sure they are gluten and dairy free if you need that.

Ingredients:

1 can corn (drained)

1 can blackeye peas (drained) (may use black beans instead)

1 can diced tomatoes

2 avocados (diced)

3 fresh tomatoes (diced)

1/2 bunch of cilantro (chopped)

1 pack of Italian dressing seasoning

Salt and Pepper to taste

Directions:

  • Combine corn, peas/beans, tomatoes, avocados, and cilantro together.
  • Sprinkle dressing, salt and pepper and stir. Add more if desired (of course, you can also not put all of the serving amount.)

Ingredients

  • 1 can corn drained
  • 1 can blackeye peas drained (may use black beans instead)

  • ½ bunch of cilantro chopped, may use less!

Instructions

  • Combine corn, peas/beans, tomatoes, avocados, and cilantro together.
  • Sprinkle some of the dressing, salt and pepper in, stir. Continue mixing Italian seasoning in.

Notes

You can add black beans as well for added fiber and protein, but it’s not originally in the recipe.
